Hi Libby- I hear you- my kids have never been big sandwich eaters so school lunches are always tricky! I try and cut up a bunch of fruit and cheese at the beginning of the week,so everyone can just grab them along with containers of yogurt, hummus, or some dipping sauce. I have found that when I put food in the lunch box that my child has to make (i.e. bread, meat, mayo & mustard) he actually eats it, because he has a part in the making of it. When I asked him why he told me that "it doesn't feel like he had a say in it before, but now that he is involved he likes it." I also will cut fruit and put a yogurt snack to dip it with.
