Make one batch of white sauce, according to the Simple White Sauce Recipe, and set aside.
If using vegetables, add them to a medium pot. Add water just to cover. On medium-high heat, boil the vegetables for 8 minutes or until crisp tender. Remove from heat and drain.
Add 2 or 3 teaspoons of curry and 1 teaspoon of cumin to the white sauce. Gently stir in chicken and veggies.
Serve over cooked rice.
