Quick Meatball Soup

This dish is terrific when you need something hearty and quick.

  • 2 tablespoons olive oil
  • 5 cloves garlic, thinly sliced
  • 32-ounce can chicken broth
  • 1/2 cup white wine
  • 1/2 cup orzo pasta
  • 1 package frozen turkey meatballs
  • 1 1/2 cups fresh tomato, chopped (optional)
  • 6 ounce bag fresh baby spinach


  1. In stockpot, heat oil.
  2. Add garlic and saute for just 20 seconds.
  3. Add broth and wine and bring to a boil.
  4. Add orzo and cook for 4-5 minutes.
  5. Add meatballs and tomato and bring to a boil. Add spinach and stir just until wilted. Serve.
