Spinach Lasagna

Though this recipe calls for baking the lasagna, the oven should not be preheated! Instead, the dish is placed in a cold oven, which is then heated to 350 F—the preheating is part of the cooking process.

Ingredients

  • 1 cup chopped onion
  • 2 garlic cloves, minced
  • 15 1/2 ounce jar spaghetti sauce
  • 1 can Italian peeled tomatoes (dice, if preferred)
  • 2 teaspoons Italian seasonings
  • 2 tablespoon grated Romano cheese
  • 9 uncooked lasagna noodles
  • 16 ounce container ricotta cheese
  • 1 package chopped spinach
  • 3 cups shredded mozzarella cheese
  • 1/4 cup grated Romano cheese

Directions

  1. Do not preheat oven!
  2. In a large pan, saute onion in olive oil, then add garlic. Stir in spaghetti sauce, tomatoes and seasoning. Add 2 tablespoons Romano cheese, and simmer.
  3. In greased baking dish, layer three uncooked lasagna noodles.
  4. Drain spinach well and combine with ricotta cheese.
  5. Remove cover, place in cold oven, heat oven to 350 F. and bake for 45-50 minutes or until bubbly and cheese is lightly browned.

  7. Let stand 15 minutes before cutting lasagna into squares.
