Ingredients

  • 1 pound ground beef or turkey
  • 1 cup white or brown rice
  • 2 cups salsa
  • 1 can black beans
  • tortilla chips
  • shredded cheese (string cheese may be substituted)
  • chili powder
  • pepper
  • 1 cup shredded mozzarella cheese (string cheese may be substituted)

Directions

  1. Preheat oven to 375 F.
  2. Brown the ground beef or turkey, then add chili powder and pepper to taste. Remove from heat.
  3. Cook rice according to directions.
  4. In a large mixing bowl, combine meat and rice. Add 1 cup of salsa and the can of black beans. Stir all ingredients together.
  5. Place a layer of tortilla chips on the bottom of a 9 x 12 casserole dish. Cover chips with meat and rice mixture. Cover this with another layer of tortilla chips. Top with shredded cheese (if using string cheese, peel strips of the cheese and lay across the top). Add remaining salsa to the top.
  6. Warm the dish in the oven for 12 minutes or until cheese is melted.
