Apple-Walnut Coleslaw

This is the perfect side dish, or condiment, for a sandwich or our Best Black Bean Burger. It's healthier than fries, chips, or potato salad, but it still packs a flavor punch.

  • 4 cups shredded red and/or green cabbage (bagged cabbage works well)
  • 1 apple, peeled and chopped
  • ½ cup walnuts, chopped
  • ¼ cup mayonnaise
  • 1 tablespoon mustard
  • ¼ cup cider vinegar
  • 2 teaspoons sugar
  • Salt and pepper to taste
  • Blue cheese crumbles (optional)
  • Directions

    1. In a large bowl, combine cabbage, apple, and walnuts. Set aside.
    2. In a small bowl, combine remaining ingredients and whisk well.
    3. Pour dressing over cabbage mixture and stir well. For best results, let slaw marinate for a few hours. For a more grown-up flavor, crumble blue cheese on top.
