This is the perfect side dish, or condiment, for a sandwich or our Best Black Bean Burger. It's healthier than fries, chips, or potato salad, but it still packs a flavor punch.
4 cups shredded red and/or green cabbage (bagged cabbage works well)
1 apple, peeled and chopped
½ cup walnuts, chopped
¼ cup mayonnaise
1 tablespoon mustard
¼ cup cider vinegar
2 teaspoons sugar
Salt and pepper to taste
Blue cheese crumbles (optional)
Directions
In a large bowl, combine cabbage, apple, and walnuts. Set aside.
In a small bowl, combine remaining ingredients and whisk well.
Pour dressing over cabbage mixture and stir well. For best results, let slaw marinate for a few hours. For a more grown-up flavor, crumble blue cheese on top.
