Applesauce Raisin Bread

This bread makes a great lunchbox or after-school snack.

  • 1 1/2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 1/2 cups applesauce
  • 1/2 cup sugar
  • 1/4 cup canola oil
  • 2 egg whites
  • 3 teaspoons cinnamon
  • 2/3 cups raisins (light or dark)
  • Directions

    1. Preheat oven to 375 F.
    2. Combine flour, baking soda, and baking powder, and set aside.
    3. Combine applesauce, sugar, canola oil, egg whites, and cinnamon. Add flour mixture, mixing on medium speed. Fold in raisins.
    4. Pour batter into a bread loaf pan sprayed with non-stick spray. Bake for 45-50 minutes.
    5. Cool and enjoy.
