Atticus’s Hawaiian Rice

Prep time: 15 minutes Cook Time: 15 minutes This Hawaii-inspired recipe comes to us from young chef Atticus, a 2015 Ben’s Beginners™ winner. It’s filled with the flavors of the South Pacific, including coconut milk and pineapple. Plus, it’s quick ‘n’ easy to make!

Atticus’s Hawaiian Rice

  • 1 14oz can coconut milk
  • 1 cup chicken stock
  • 1 cup UNCLE BEN’S® ORIGINAL CONVERTED® Brand Rice
  • 1 cup shredded carrots
  • 1/4 cup scallions, sliced
  • 1 pound of bacon, cooked and diced
  • 1 can pineapple chunks, drained
  • 1/2 cup cashews
  • 1 tablespoon ginger, minced
  • Directions

    1. Combine the coconut milk and chicken stock in a pan and bring to boil.
    2. Once liquid has come to a boil, add rice and allow to simmer.
    3. Once rice has cooked remove from stove, let cool, and pour into a large bowl.
    4. Mix in shredded carrots, scallion, cooked bacon, pineapple chunks, cashews, and ginger.
    5. Stir all ingredients in bowl.
    6. Serve.
