Chicken Picante

This is a quick and easy to make recipe. Tired of chicken? Boneless pork can be substituted for the chicken.

  • 1 pound boneless chicken breasts, cut into 3/4-inch cubes
  • 1 tablespoon taco seasoning mix
  • 2 teaspoon vegetable oil
  • 1 8-ounce jar chunky style salsa
  • 1/3 cup peach preserves
  • Directions

    1. Coat the cubed chicken pieces with taco seasoning.
    2. Heat oil in large skillet over medium high heat, add chicken, and cook until brown, stirring occasionally.
    3. Add salsa and preserves to pan, lower heat, cover, and simmer for 15-20 minutes.
    4. Serve over pasta or rice.
