Family-Friendly Chicken Curry Over Rice

Though the recipe calls for one batch of my Simple White Sauce, my kids love this dish so much that I usually double or triple the recipe (and the sauce) for make-ahead dinners and leftovers. The finished dish stores well in the refrigerator. This sauce can also be used to make Creamy Chicken Enchiladas and Homestyle Chicken Potpie.

  • 1 batch of Simple White Sauce (see recipe link above)
  • 3 teaspoons curry seasoning (McCormick brand is bland enough to be kid-friendly)
  • 1 teaspoon cumin
  • 1 rotisserie chicken, meat removed and chopped into bite size pieces
  • 3 cups of brown or white rice, prepared according to package directions
  • Optional: 4 medium potatoes, peeled and diced; 1 cup carrots, peeled and sliced; ½ cup onion, diced; and ½ cup celery, diced
  • Directions

    1. Make one batch of white sauce, according to the Simple White Sauce Recipe, and set aside.
    2. If using vegetables, add them to a medium pot. Add water just to cover. On medium-high heat, boil the vegetables for 8 minutes or until crisp tender. Remove from heat and drain.
    3. Add 2 or 3 teaspoons of curry and 1 teaspoon of cumin to the white sauce. Gently stir in chicken and veggies.
    4. Serve over cooked rice.
