GoodNCrazy Chinese Cabbage Salad

This delicious, oh-so-easy salad can be made ahead of time. Serve it dressed with with the topping and dressing, or serve the topping and dressing in separate dishes alongside the salad, and let people help themselves. If served separately, leftovers be refrigerated for up to 2 days.

  • SALAD: 1 whole napa cabbage, shredded; 1/2 head of lettuce (any type), shredded; 4-6 scallions (green onions), sliced
  • TOPPING: 2 tablespoons butter; 1 package chicken ramen noodles (remove packet and crush noodles);1 small package sliced almonds (optional; 1 container sesame seeds
  • DRESSING: 1/4 cup rice wine vinegar; 1/4 cup vegetable, canola, or olive oil; 2 tablespoons white sugar; 2 tablespoons soy sauce
  • Directions

    1. Mix the salad ingredients together in a large bowl, and set aside.
    2. In a saucepan over medium-high heat, melt the butter.
    3. Add the almonds, ramen noodles, and sesame seeds, and stir for 2 minutes or until golden.
    4. Remove from heat and stir in the ramen seasoning packet. Let cool.
    5. In a separate bowl, add all the dressing ingredients and whisk until combined.
    6. Dress the salad with the dressing and the toppings; toss and serve.
    7. OR, serve the toppings and dressing alongside the salad, allowing people to help themselves.
    8. If salad is not served dressed, refrigerate leftover salad, toppings, and dressing in separate containers for up to 2 days.
