Icebox Cake

This recipe is fast, easy, and makes a delicious dessert! It's perfect for feeding a crowd gathered for a holiday or celebration. Just decorate the top with holiday-themed colors—blueberries and raspberries or strawberries for July 4th, for example—and bring it to the table for guaranteed applause!

  • 2-3 boxes chocolate wafer cookies
  • 3 cups heavy cream (you can also use the whole quart, which is 4 cups)
  • 3 tablespoons powdered sugar
  • Directions

    1. In a large bowl, whip the heavy cream with the powdered sugar.
    2. On a plate, place 7 wafer cookies—6 around the edges, and one in the center. If desired, put a dab of the whipped cream mixture on the plate, beneath each cookie, to keep them stationary.
    3. Put 1/2 cup of the whipped cream mixture over the cookies. Add the next layer of 7 cookies, then another 1/2 cup of the whipped cream mixture. Keep layering until the cookies are gone.
    4. Refrigerate. When ready to serve, cut as you would a round layer cake.
