Shortcut Homemade Salsa

If you’re tired of jarred salsa but don’t have time to chop tomatoes for fresh salsa, this recipe, which uses canned tomatoes as a time saver, is a delicious alternative! Serve with tortilla chips or use to garnish Black Bean Tacos.

  • 2 14.5 ounce cans diced tomatoes (drain one, but do not drain the other)
  • 2 garlic cloves, chopped
  • 2 tablespoons red wine vinegar
  • 1 lime, juiced
  • ½ cup fresh cilantro, chopped
  • 1 jalapeno, seeded and chopped fine (optional)
  • Directions

    1. In a food processor, combine 1 can diced tomatoes with liquid (undrained), garlic, vinegar, lemon juice, and jalapeno. Process until well blended.
    2. Stir in the can of diced tomatoes (drained), and the chopped cilantro.
    3. Serve as an appetizer with tortilla chips, or use to garnish Black Bean Tacos.
