Slow Cooker Beef Stew

Try these variations to this delicious stew: Dredge the beef in flour and saute in olive oil before adding to the slow cooker. Also, add a savory spice, such as cumin, cloves or paprika, for even more flavor.

  • 1/2 pound of stew beef (can be sauteed first, if desired; see Directions)
  • 3-4 potatoes, chopped
  • 2 cloves garlic, sliced or whole (whole clove yields more subtle flavor)
  • 3-4 carrots, chopped
  • 3-4 stalks of celery, chopped
  • 1 large onion, sliced
  • splash of Worcestershire sauce
  • 1/2 cup of beef broth (ideally, low sodium)
  • 2 bay leaves
  • salt and pepper to taste
  • peas, optional (add at end, once stew is cooked)
  • Directions

    1. Simply add all ingredients to the slow cooker, stir to mix briefly, and cook, covered, on low for 8 hours. (Note: Do not add beef if sautéing it first.)
    2. Serve with sliced crusty bread, such as a French loaf.
