Chicken and Apples with Rice

Ingredients

  • 2 whole chicken breasts, split (or four single breasts)
  • salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 onion, sliced
  • 1 apple, peeled, cored, and cut into thin wedges
  • 1/2 cup apple juice
  • 2 cups rice, cooked
  • If using variation: 1 garlic clove, crushed; 1 teaspoon dried rosemary or tarragon, crushed; and/or 1 teaspoon pumpkin pie spice

Directions

  1. Season chicken breasts on both sides with salt and pepper.
  2. In large skillet, heat oil over medium heat. Add chicken breasts and brown on both sides. Remove from pan.
  3. Add onion to pan and saute until transparent.
  4. Add apple slices, apple juice, and chicken breasts to pan. Simmer until chicken is done, about 15 minutes. Serve with rice.
