These cookies, made with lemonade concentrate, have a hint of tartness but don't worry; it's tempered by the sweetness of the sugar.

Ingredients

  • 1 cup butter
  • 1 cup granulated sugar
  • 2 eggs
  • 3 cups all-purpose flour, sifted before measuring
  • 1 teaspoon baking soda
  • 6-ounce can frozen lemonade concentrate, thawed, divided
  • 2 teaspoons finely grated lemon peel, optional granulated sugar

Directions

  1. Preheat oven to 400 F.
  2. Cream butter and sugar until light; add eggs and beat until light and fluffy.
  3. Sift together the baking soda and sifted flour, and add to the creamed butter mixture, alternating with 1/2 cup of the lemonade concentrate. Stir in grated lemon peel.
  4. Drop dough by teaspoonfuls, 2 inches apart, onto ungreased baking sheets. Bake cookies for 8 minutes or until lightly browned around edges.
  5. Brush hot cookies with remaining lemonade concentrate, then sprinkle with a little granulated sugar. Remove cookies to racks.
